The days are getting longer and hotter and the food is getting lighter and colder. ‘Tis the season for salads! Salads are one of my favorite foods because they are fast and easy to prepare, and almost always incredibly healthy. I typically opt for one of my big ass salads, however sometimes I like to go all out gourmet and make big fancy salads with unique dressings and fun ingredients. Here are a few of my faves.
Arugula Salad with macadamias, mango and avocado
Grilled Asparagus and Spinach Salad
Protip for busy people: Store your lettuce in a sealed bag in your crisper. Store the rest of your toppings (already cut and prepared) in an airtight container. Store your dressing (make 2-3 times the called for amount) in another airtight container in the fridge. Mix all together when needed and you have an instant delicious salad! Most cut veggies will last up to a week.
