This week was incredibly tiring, but for good reasons! I have been spending a lot of time in circus-land, and working on a few personal projects. After a few weeks of being unmotivated, I have finally got back some much needed personal incentive. What a perfect time to take a vacation! I will be out of town visiting family all next week, but don’t worry I still have some posts to share.
I cooked noteworthy meals twice this week! Tuesday I made sweet chili lime tofu from Vegan Yum Yum. I used agave instead of regular sugar, which prevented it from glazing (I think) – but it was still good! I also made garlic roasted asparagus and mashed sweet potatoes. I’m still going through the sweet potatoes from my garden! Last night (movie night) we watched Out of Sight, and I made Snobby Joes and pineapple cashew quinoa stir-fry from Veganomicon I paired it with some sauteed spinach. I had gluten-free buns with my snobby joes (maybe that makes them snooty?), and the boys had regular wheat rolls. My brother loves the quinoa stir-fry so much, that I made double and sent him home with a huge container. I’m such a great sister.
