Mushroom Ginger Congee
Makes 2 servings
Served in a bowl, Congee is a thick Asian comfort food that can soothe a sore throat or just make you feel better after a bad day. This recipe makes enough for two but feel free to double or triple if you’re feeding more or want to keep some in the fridge for the duration of your cold. The mushrooms and ginger are great for getting your immune system back on track.
Ingredients:
- 3 cups (710 ml) vegetable broth or vegan chick’n broth
- 1/2 cup (48 g) rolled oats
- 1/2 cup (35 g) minced mushrooms (shiitakes are great)
- 1/4 cup (27 g) minced carrot or sweet potato
- 1 tablespoon (6 g) grated ginger
- 1 teaspoon soy sauce
- 1/2 teaspoon rice wine vinegar
- salt, to taste
- hot pepper flakes, to taste
Preparation:
- Bring the broth, oats, mushrooms and minced carrot or sweet potato to a boil in a medium pot.
- Lower the heat to medium-low and add in the ginger, soy sauce and vinegar. Cook for 15 to 20 minutes until the oats are cooked and the stew becomes thick.
- Before serving, add salt to taste and spice with hot pepper flakes.

I love OXO’s SteeL line. I have a couple of the cooking/serving utensils. I have to admit I covet the SteeL salad spinner and the SteeL mandoline slicer. But what I use the most would be my little tea strainer 🙂 I like OXO because it is all very ergonomically designed, so easy to use, and the products are very durable. Usually easy to clean, too.

I guess I haven’t got really crazy with oats yet, though I have a recipe for a mushroom steel cut oatmeal risotto that I’m anxious to try.
Probably the most creative I’ve been with oats so far is putting them in my breakfast smoothies. That or my bath water when my skin is really itchy.

Craziest meal with oatmeal was an overnight pudding — the oatmeal soaks up water, sugar, and cocoa. It was weird.

My favorite OXO product I own is my garlic press. I would love an OXO mandoline slicer or the julienne peeler.
As far as oats, I’m a big fan. I’ve recently began soaking my oats overnight for oatmeal and it’s amazing! I have made some awesome pinto bean oat burgers, which has me excited to try more unique recipes using oats.

My first OXO product purchased was a vegetable peeler. The feeling of a soft yet solid handle was incredible. Today I have many OXO products including garden trowels. As I am a boomer stiffness is sometime an issue but thanks to the genius of OXO it is not a issue in the kitchen. Thank you for inventing a marvelous product and increasing the product line.
