Don’t you hate when you want an awesome dessert – which usually involves the oven to bake it – and it’s like 100 degrees outside? Normally that means you just go and buy something at the store that is full of sugar, carbs, and loaded with calories. And all types of allergens. Well right now I am on a no-allergen kick and taking into consideration the heat, I decided to make a No-Bake Peach Raspberry Crumble.
Since I started my elimination diet at the beginning of the month I have been doing really well not having desserts or sweets. I haven’t felt like I have been missing out on anything. And I also can now see how much junk I was eating that I hadn’t actually paid attention to. Foods and plain ole junk that I had let into my normal routine and then wondered why I was gaining weight and not feeling like myself. Sugar and crap-food. Not good, not good at all. And since the other part of the elimination diet was to cut allergens the only thing I do miss is plain peanuts and Chex. So, I needed to make a dessert that had a little carb and a little crunch. Oats and almonds sweetened with a little pure maple syrup. A little fruit sweetened with date and maple syrup puree. Although you will need to use the stove, this is a pretty quick dessert that will hit every sweet-spot you have! And is great and easy to put together dessert for friends!
No-Bake Peach Raspberry Crumble
Makes 4 servings
Fruit Layer
1 package frozen peaches, defrosted
1/2 package frozen raspberries, defrosted
1/2 teaspoon chai spice
2 tablespoon 100% pure maple syrup
10 dates, soaked
2 tablespoons date soaking water, reserved
Crumble
1/2 cup 0ats
1/4 cup plain almonds, chopped
1/2 teaspoon chai spice
2 tablespoon 100% pure maple syrup
Preparation
- Pour peaches, defrosted raspberry juice and 1/2 the package raspberries, and the chai spice into a saute pan. Bring to a boil then lower heat to let sauce thicken.
- In a small pan pour oats, chopped almonds and chai spice. Toast on low heat until just starting to smell toasted. Take off heat until fruit is done.
- In small food processor add soaked dates, maple syrup, and date water and process until smooth. Dump into thickened fruit. Keep over low heat to combine all flavor, about five minutes.
- Add maple syrup to toasted oat pan and turn on heat to low. Keep mixing until heated. Take off heat.
- In small dishes add fruit then sauce then top with crumble.
