After making a cauliflower pizza crust and enjoying it so much, I knew another pizza was in my future. Sooner than I probably needed it to be. Since I had already bought the items to make some tacos, I decided to make a Taco Pizza with the Cauliflower Pizza Crust. The crust is really good, but very flimsy and should be eaten with a fork. The cauliflower takes on a roasted flavor and the creamy rice adds a really good texture.
Cauliflower Pizza Crust – Vegan & GF
Ingredients
- 4 Cups Riced Cauliflower
- 2 Tablespoons Garlic Powder
- 2 Teaspoons Oregano
- 1 Tsp Basil
- 1/2 Teaspoons Black Pepper
- 3/4 Cups Creamy Brown Rice Farina
- 2 Tablespoons Water
- 2 Flax Eggs
Preparation
- Shred cleaned cauliflower in your food processor. If you don’t want a lot of leftover riced cauliflower, start with just a few florets at a time and measure out after it is shredded, then continue.
- Turn oven to 350 degrees.
- In a medium pot on low setting stir your cauliflower and add your spices.
- After 5 minutes of stirring (keep stirring so it won’t burn) add your rice and water and keeping mixing.
- Turn off the burner after a minute then add flax eggs. Mix everything really well until completely combined.
- Pour “dough” onto a parchment covered baking sheet and, using your fingers, press out flat, a little more than 1/4 inch thick.
- Bake for 30 minutes.
Taco Toppings
Ingredients
- 2 Cans Black Beans
- 1 Teaspoon Cumin
- 2 Teaspoon Garlic powder
- 1 Teaspoon Paprika
- 1 Tablespoon Chili Powder
- 1/2 Can No Salt Added Tomato Sauce
- 1/2 Can Diced Tomatoes with Green Chilies
- 1/2 Small Red Onion, chopped small
- 1 Small Can Meatless Taco Filling
- Sliced Mushrooms
- 1 Can Olives, drained and sliced
- 1 Package Vegan Mexican Style Cheese Shreds
Preparation
- In food processor pour drained beans and spices. Process until beans are smooth.
- When crust is done take out and set on top of oven.
- Pour tomato sauce over crust and use a spoon to spread.
- Spoon beans over sauce and spread carefully with either a spoon or your fingers. The crust is very fragile and may split so be careful while spreading.
- Next sprinkle the chopped onions, meatless taco filling, sliced mushrooms, and olives.
- Sprinkle cheese then bake for 20 minutes.
- Let cool a few minutes then use a knife to cut.
- Use a large spatula to place slice on plate.
- Top with lettuce, chopped tomato, sliced avocado and enjoy!
