If you have not been following Namely Marly’s “America’s Top 10 New Sandwiches Veganized” – you probably should be. It is a glorious response to The Huffington Post’s “America’s Top 10 New Sandwiches” feature that oozed with meats, cheeses and all other kinds of grossness. Marly set out to encourage other bloggers to turn these artery cloggers into healthy plant-based foods. Or… as healthy as you can get mimicking meat and dairy. But you get the point! There are only two more sandwiches to go and so far the submissions have been totally impressive. My favorite is definitely The Maple.. inspired by a sandwich from right here in PDX.
I was totally honored to be included in the festivities, and my recipe for the Lasagna Bolognese Sandwich was released a few days ago. It was a daunting recipe. I had to recreate things I never really ate as an omnivore. However, it ended up being a surprisingly delicious meal and was so much fun to make.
If you are thinking of making this bad boy you can save time by using Daiya Mozzarella instead of the spread and you can also use oven ready lasagna noodles. If you don’t have the time to complete this recipe in one sitting, make the bolognese sauce the night before. Then.. viola! A 3 hour endeavor turns into 45 minutes.
