I just harvested a boat-load of sweet potatoes from the garden a few weeks ago. Now they are all cured and washed and ready for some eatin! The only problem is that baking these suckers gets a little old after a while. Surprisingly, sweet potatoes are incredibly diverse foods that taste great in hearty entrees as well as sweet succulent desserts.
Don’t let their sugary demeanor fool you, sweet potatoes are also great for you! They are jam packed with Vitamin A (Beta Carotene), Vitamin C, Potassium and Iron. They are powerful antioxidants and also serve as an anti-inflammatory.

Thanks Kandace! Sweet potatoes are super easy to grow but you do need a lot of space. I just moved into a house this year with a yard for the first time ever! So naturally I went nuts growing food.
